Light and delicate with an added richness, this homemade pesto and pine nut fish will make even the pickiest eaters melt.
Ingredients
Homemade Pesto Sauce:
2 cups basil
¼ cup toasted pine nuts toasted
4-5 TBS olive oil
1 tsp lemon juice
1 ½ TBS minced garlic
½ cup parmesan cheese
½ tsp salt
1/8 tsp pepper
4 cod fillets (6 ounces each)
1/4 cup olive oil
1/2 cup shredded Parmesan or Romano cheese
1/2 cup pine nuts, toasted
Directions
Prepare pesto sauce mix according to directions; set aside. Coat fillets with ½ pesto mix.
In a large skillet, heat oil over medium heat. Add fillets; cook until fish just begins to flake easily with a fork, 4-5 minutes on each side. Remove from heat. Sprinkle with additional pesto and pine nuts.
Editor’s Note
To toast nuts, bake in a shallow pan in a 350° oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.
