Stuffed Date Bites

If you are looking for a better summer treat with less refined sugar and more healthy fats you can’t beat these Almond t Butter Stuffed Dates are a super delicious dessert or snack. They are so simple to make and only require two ingredients and your imagination for different toppings!

INGREDIENTS

6 Medjool Dates

6 tsp Almond butter Butter * See Note 1

Optional Toppings: Dried fruits like cranberries, apricots, cacao powder, toasted coconut, pomegranate seeds, sesame seeds or drizzled chocolate.

INSTRUCTIONS

Carefully remove the pits from the dates. Be careful to keep one side of the date intact. You want to add a slit to hold the peanut butter rather than splitting the date in half. (See picture above)

Add a tsp of almond butter butter to each date. 

Add toppings if desired.
